The underlying science of how food affects the body.
Nutrition science answers two separate questions: how much energy and material enter the body, and what the food does beyond supplying them. Energy balance governs the first. It is an accounting identity, always true, and therefore explains nothing by itself. All of the useful science is inside the terms of the equation, in what moves intake and what moves expenditure.
Intake is regulated, not chosen freshly each day. Satiety signaling, palatability, energy density, portion size, protein and fiber content, and simple availability all shift how much a person eats before they notice deciding.
Expenditure has four parts: resting metabolic rate, the thermic effect of food, deliberate exercise, and non-exercise activity thermogenesis, James Levine's term for fidgeting, posture, and unstructured movement. NEAT is large and it is responsive. It falls when you eat less and rises when you eat more, without permission.
This is why deficits shrink themselves. Lose weight and the smaller body costs less to run, and expenditure drops somewhat further than mass alone predicts. Nothing is broken when a deficit stops producing loss. The equation rebalanced, as it is built to.
Protein does three useful things: it is the most satiating macronutrient per calorie, it carries the highest thermic cost, and it preserves lean mass during weight loss. That combination is why it survives every dietary fashion.
Fiber and food structure change the rate of digestion and the fullness delivered per calorie. Whole foods are harder to overeat mostly because they are less energy dense and slower to chew, not because they carry a special property. Individual glycemic responses to identical meals vary more than population averages suggest.
Micronutrients and essential fatty acids are requirements. Meeting a requirement prevents a deficit; exceeding it does not buy an upgrade.
The correct diet is the one you would still be eating in a year, which eliminates most of them before the science starts.
